Weight, that is.
Last night at my Weight Watcher meeting I reached my 5% goal ~ that means losing 5% of my original body weight. It feels great by the way! I am seeing changes in my health which was the catalyst the brought me back to a WW meeting. Two weeks ago my leader shared some of the great things that can happen with your health just by losing 5% and it really fueled me up to push to get to this goal and move beyond.
I love my new WW leader and my new WW class. There's a married couple there that I just adore ~ their names are Hector and Sandy and together they have lost over 100 pounds! They have fabulous ideas for success and last week Hector shared with me about 3 point mini cheesecakes which have become my new treat. Sandy told me about bagel thins which have now also become a favorite. I have a sweet tooth -- I don't need to "over indulge" but I really crave a little something sweet everyday, either with a cup of tea in the afternoon or a while after dinner. Last night Hector and Sandy gave me a recipe for 1 point fudge and after the meeting I got all the ingredients and made it before I went to bed. Oh. my. stars. This stuff is amazing and it's super easy to make.
One thing I love about Hector is that he is very inspirational. He won a fight with cancer and is thriving. He will soon be the LONGEST SURVIVING PERSON IN THE WORLD who had his particular type of leukemia!! He beat this cancer five years ago and is in remission. Now he has gone to the next level with his health and has lost all this weight and is almost at his optimal size, how much will this add to his years and quality of life? Certainly a lot. I think it's amazing what he has accomplished and sweet Sandy is right by his side helping him and thriving too.

Dark and Creamy Fudge
Point Plus: 2
10 oz bittersweet or semisweet chocolate, finely chopped
1 (14 oz) can fat-free sweetened condensed milk
1/2 tsp vanilla extract
pinch + scant 1/2 tsp coarse sea salt
Line 8 inch square baking pan with plastic wrap, leaving 2 inch overhang. Smooth out any wrinkles.
Combine chocolate, condensed millk, vanilla, and pich salt in large heavy saucepan. Coo, stirring occasionally, over medium-low heat, until chocolate melts and mixture is smooth, about 5 minutes. Transfer fudge to prepared pan; spread evenly with rubber spatula. Let cool. Cover with plastic wrap and refrigerate until firm, at least 2 hours. Uncover fudge; remove from pan by lifting edges of plastic wrap. Invert fudge onto cutting board; discard plastic wrap,. Cut fudge into 8 strips, then cut each stsrip crosswise into 8 pieces. To serve bring the fudge to room temperature. Yields 2 pieces per serving.

I LOVE this fudge recipe - it's the only kind I make...only I have never made the "1 point" version, and never used sea salt. Sounds like I'll be making a trip to the grocery store today....
